Pici are a eggless “pasta” traditional in the south of the area of Siena, made with water and white flour in the shape of big “spaghetti”. Their consistence is very different from “tagliatelle” and they cannot be dried up and packed.

Every Thursday morning, in the old kitchen of the XVI century palace where
it's located, the Ristorante degli Archi offer a demonstration on the preparation
of the pici . At the end you will be able to taste plate of pici, with a
sauce at your choice: with aglione,(garlic tomato sauce), or “cacio e pepe”
( sheep cheese and pepper) or “ briciole” (bread crumbs) or meat sauce, accompanied
with a goblet of red wine Orcia DOC.
Every week we will propose a wine tasting of a different winery. We will give you also a copy of our recipe to take home.
The cost for the demo and this light lunch is 15 euros, including wine.
